Description

A rich, creamy, and comforting dump-and-go crockpot mac and cheese that delivers a bubbling, golden pool of cheesy pasta with minimal effort.


Ingredients

  • 1 Lbs Uncooked elbow macaroni
  • 16 oz Sharp Cheddar cheese (shredded)
  • 1 can evaporated milk
  • 1.5 cups whole milk
  • 0.5 cup butter
  • 3 oz cream cheese
  • 1 large egg
  • 1 large egg yolk
  • 1/4 tsp black pepper
  • salt to taste

Instructions

  1. Step: Fill a large pot with water and heat it to boil
  2. Step: Add a generous amount of salt to the boiling water
  3. Step: Once the water boils, add the elbow pasta and cook according to the package instructions
  4. Step: After 7 minutes, your pasta should be done. Remove it from the heat and rinse it to stop the cooking
  5. Step: Crack an egg and one egg yolk, then whisk them together
  6. Step: Cut the butter and cut cream cheese into cubes for easier cooking
  7. Step: Spray the inside with non-stick cooking spray or wipe it down with a thin layer of softened butter
  8. Step: Add the cooked macaroni into the greased slow cooker
  9. Step: Pour in the whole milk
  10. Step: Add the evaporated milk
  11. Step: Add the cubed butter and cream cheese
  12. Step: Mix in the whisked egg and egg yolk
  13. Step: Stir to combine everything
  14. Step: Top with cheese
  15. Step: Stir to combine, everything should be well mixed
  16. Step: Season with salt, black pepper, and any other spices you like
  17. Step: Cover with a lid and cook on low for about 2 hours
  18. Step: After 1 hour, uncover and stir. Taste for seasoning and adjust as needed. Cover and let it continue cooking
  19. Step: After 45 minutes, sprinkle more cheese on top and turn the heat to high for 10 more minutes
  20. Step: After 15 minutes, the mac and cheese is ready
  21. Step: Serve and enjoy!!

Notes

Always cook on LOW to prevent the cheese from separating. Shred cheese from a block to avoid anti-caking agents. Evaporated milk is essential for a stable sauce. If the dish thickens too much on the WARM setting, stir in 2-3 tablespoons of warm whole milk.
