Description

This Potato Gnocchi Soup delivers the cozy satisfaction of a loaded baked potato in just 30 minutes. It’s creamy and cheesy, loaded with smoked turkey bacon and cheddar, and made easy with store-bought gnocchi.

  • 68 slices smoked turkey bacon
  • 1 large onion, diced small
  • 1 tablespoon minced garlic
  • ¼ teaspoon black pepper
  • ¼ teaspoon Kosher salt
  • 2 cups low-sodium chicken broth
  • 1 pound potato gnocchi
  • 1 cup heavy cream
  • 11¼ cups shredded cheddar cheese
  • scallions or chives, chopped
  • sour cream

Instructions

  1. Step 1: In a Dutch oven, cook 6-8 slices smoked turkey bacon over medium heat until brown and crisp. Drain it on a paper towel-lined plate, then chop and set aside. Remove the bacon drippings, leaving one tablespoon in the pan.
  2. Step 2: Add 1 large onion, diced, and saute until soft and translucent, about 7-10 minutes. Add 1 tablespoon minced garlic, ¼ teaspoon black pepper, and ¼ teaspoon Kosher salt, and cook for another minute.
  3. Step 3: Add 2 cups low-sodium chicken broth and bring to a gentle boil. Stir in 1 pound potato gnocchi and cook until the gnocchi floats to the surface; 3-4 minutes for frozen or 2-3 minutes for pre-packaged.
  4. Step 4: Reduce the heat to low and stir in 1 cup heavy cream. Add 1-1¼ cups shredded cheddar cheese in batches, stirring until melted before adding more. Stir in the smoked turkey bacon, reserving some for garnishing. Taste and adjust seasoning as needed.
  5. Step 5: Ladle the soup into bowls and garnish with remaining smoked turkey bacon, cheese, scallions, and sour cream.

Notes

If you prefer a thinner consistency, add more broth. Use freshly shredded cheese for smoother melting. Store in an airtight container in the refrigerator for 3-4 days.
