- 8 oz linguine or fettuccine
- 1 cup heavy cream
- 4 cloves garlic, minced
- 0.5 cup Parmesan cheese, grated
- 0.5 cup alcohol-free white grape juice or vegetable broth
- 1 tsp red pepper flakes
- 1 lb shrimp, fresh or thawed and patted dry
- 2 tbsp parsley, chopped
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add pasta and cook for 8-10 minutes until al dente. Drain, reserving some pasta water, and set aside.
- Step 2: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque. Transfer to a plate and cover to keep warm.
- Step 3: In the same skillet, sauté the minced garlic over medium heat for about 30 seconds. Add the alcohol-free liquid and simmer for 1-2 minutes. Pour in the heavy cream and stir to combine.
- Step 4: Reduce heat to low and stir in the Parmesan cheese until melted and smooth. If the sauce is too thick, stir in a little reserved pasta water.
- Step 5: Fold in the cooked pasta and shrimp, ensuring they are well-coated. Remove from heat, garnish with fresh parsley, and serve warm.
Notes
For best results, do not overcook the shrimp, use quality cream, and prefer fresh garlic for maximum flavor. Adjust spice levels to taste.
