This one pot creamy garlic chicken is made with parmesan, garlic and cilantro (or herb of choice) for a delicious 20 minute meal. All you have to do is throw everything in one skillet or pot and once cooked, you can taste the fragrant flavor. The juicy chicken thighs go great with white rice and side of veggies.
Ingredients
Scale
- 1.5 pound chicken thighs (boneless and skinless)
- 1.5 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 teaspoon garlic powder
- 0.5 teaspoon paprika
- 0.5 teaspoon cumin
- 1 tablespoon neutral oil
- 1 tablespoon unsalted butter
- 1 cup half & half
- 4 garlic cloves (minced)
- 0.25 cup shredded parmesan
- 12–20 sprigs cilantro (finely minced)
Instructions
- Season Chicken: Pat chicken thighs dry with a paper towel. Mix salt, black pepper, garlic powder, paprika, and cumin together in a bowl and season chicken on both sides.
- Cook Chicken: Heat pan to medium-high heat with 1 tablespoon neutral oil. Add chicken thighs and cook for 4-5 minutes on one side. Flip and cook for 2-3 minutes until golden brown. Remove chicken from pan.
- Make Creamy Garlic Sauce: Reduce heat to low. Add butter and minced garlic to the pan and cook for one minute. Pour in 1 cup half & half and stir occasionally. Add shredded parmesan and continue to stir until thickened.
- Combine: Place cooked chicken thighs back into the pan with the sauce and cook for 1 minute. Garnish with freshly chopped cilantro.
Notes
You can substitute half & half with 1 cup milk or chicken broth; note that the sauce will be thinner. If the pan is too hot, the cream may curdle, so keep heat on low.
