Description

This Dill Pickle Pasta Salad is the best pasta salad ever! It has a creamy dressing, crunchy pickles, onions, cheddar cubes, and fresh dill!


Ingredients

Scale
  • 3 cups rotini pasta
  • 1 cup chopped dill pickles
  • 2/3 cup diced cheddar cheese
  • 1/4 cup minced red onion
  • 1/4 cup chopped fresh dill
  • 2/3 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup pickle juice
  • 1/2 tsp garlic powder
  • salt & black pepper to taste

Instructions

  1. Step: Bring a large pot of salted water to boil. Cook the rotini according to the package directions. Drain and rinse under cool water, then set over a colander to drain for at least 5 minutes.
  2. Step: In a bowl, whisk together the mayonnaise, sour cream, pickle juice, garlic powder, salt, and pepper.
  3. Step: In a large bowl, add the cooked pasta, pickles, onion, cheese, and dill.
  4. Step: Pour over the dressing and toss to coat completely. Refrigerate for at least one hour, then it’s ready to eat!

Notes

Ensure the pasta is well-drained for at least 5 minutes to prevent the dressing from becoming watery. You can substitute rotini with macaroni or shells.
