- 300 grams Spinach
- 1 medium Onion
- 2 cloves Garlic
- 150 grams Sour Cream
- 150 grams Mozzarella Cheese
- 2 tablespoons Olive Oil
Instructions
- Sauté Aromatics: Heat a splash of olive oil in a skillet over medium heat. Add sliced onions and sauté until they’re translucent, about 3-4 minutes. Toss in minced garlic for another 30 seconds until fragrant.
- Add Spinach Mixture: Stir in the thawed and drained spinach, cooking until heated through, about 2-3 minutes. Season generously with salt and pepper, then mix in sour cream until well combined.
- Prepare Salmon: Preheat your oven to 175°C (347°F). Lightly slice and season the salmon fillets with salt and pepper. Sear each side in a separate pan for 2 minutes to lock in moisture and flavor.
- Assemble Dish: Grease a baking dish and place the salmon skin-side down. Spread the creamy spinach mixture evenly over each fillet, then sprinkle a generous layer of mozzarella on top.
- Bake: Place in the preheated oven and bake for 15-20 minutes, or until the salmon is opaque and flakes easily with a fork. Ensure the cheese is golden and bubbly—check for an internal temperature of 63°C (145°F).
- Serve: Once baked, allow the dish to rest for a few minutes. Plate the salmon with the creamy spinach topping and enjoy every bite!
