  • 1 small garlic clove
  • 23 tablespoons (30-45ml) olive oil, plus more for serving
  • 0.5 tsp cumin

Instructions

  1. Prepare Flatbread Batter: In a medium bowl, combine cottage cheese, egg, flour, garlic powder, onion powder, salt, and pepper. Mix gently until just combined (about 2 minutes).
  2. Cook Flatbreads: Heat a large non-stick skillet over medium heat and lightly grease with olive oil. Pour about 0.25 cup of batter per flatbread, spreading to form a 4-5 inch round. Cook for 3-4 minutes per side until golden brown, firm, and cooked through. Repeat with remaining batter, adjusting heat as needed (total cooking time around 25 minutes).
  3. Make Beet Hummus Brush: While flatbreads cook, combine cooked beets, rinsed chickpeas, tahini, lemon juice, garlic, olive oil, cumin, salt, and pepper in a food processor. Blend until smooth and creamy (3-5 minutes), scraping down sides as needed.
