Description

Indulge in a plate of Shrimp Scampi, a classic Italian-American dish featuring tender shrimp in a rich garlic butter sauce with a hint of lemon. Perfect for impressing guests or a cozy dinner at home.

Ingredients

Scale
  • 1 lb large shrimp (peeled and deveined)
  • 8 oz linguine or spaghetti
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup alcohol-free white grape juice with a splash of vinegar
  • 1 lemon (zest and juice of 1)
  • Salt and black pepper (to taste)
  • 1/4 cup fresh parsley (chopped)
  • Lemon wedges (for serving)

Instructions

  1. Step 1: Cook the pasta by boiling water in a large pot. Add a generous pinch of salt and your linguine or spaghetti. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Step 2: In a large skillet, combine the unsalted butter and olive oil over medium heat. Allow the butter to melt and the oil to heat up.
  3. Step 3: Add the minced garlic and optional red pepper flakes to the skillet. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Step 4: Add the peeled and deveined shrimp to the skillet. Cook for about 2-3 minutes on each side until pink and opaque.
  5. Step 5: Pour the alcohol-free grape juice mixture into the skillet and bring to a simmer. Cook for 2-3 minutes to reduce the liquid and intensify the flavors.
  6. Step 6: Stir in the lemon zest, lemon juice, salt, and black pepper. Adjust seasoning to taste.
  7. Step 7: Toss in the cooked pasta, ensuring it is well-coated with the shrimp and sauce. Add a splash of pasta cooking water if needed.
  8. Step 8: Stir in the fresh chopped parsley and plate the Shrimp Scampi, garnishing with additional lemon wedges.

Notes

Shrimp Scampi can be a healthy option as shrimp is a lean source of protein. To make it even healthier, consider using whole-grain pasta or serving it with zucchini noodles.
