Instructions
- Step 1: Cook the pasta by boiling water in a large pot. Add a generous pinch of salt and your linguine or spaghetti. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- Step 2: In a large skillet, combine the unsalted butter and olive oil over medium heat. Allow the butter to melt and the oil to heat up.
- Step 3: Add the minced garlic and optional red pepper flakes to the skillet. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
- Step 4: Add the peeled and deveined shrimp to the skillet. Cook for about 2-3 minutes on each side until pink and opaque.
- Step 5: Pour the alcohol-free grape juice mixture into the skillet and bring to a simmer. Cook for 2-3 minutes to reduce the liquid and intensify the flavors.
- Step 6: Stir in the lemon zest, lemon juice, salt, and black pepper. Adjust seasoning to taste.
- Step 7: Toss in the cooked pasta, ensuring it is well-coated with the shrimp and sauce. Add a splash of pasta cooking water if needed.
- Step 8: Stir in the fresh chopped parsley and plate the Shrimp Scampi, garnishing with additional lemon wedges.
