Description

This classic chicken piccata recipe only takes 30 minutes to make! The crispy pan-fried chicken with a flavorful lemon butter caper sauce is dinner perfection. Serve with pasta or crusty bread.


Ingredients

  • 1 pound boneless skinless chicken breasts
  • Kosher salt and black pepper
  • 1 cup all-purpose flour
  • 1 cup panko bread crumbs
  • 1 teaspoon lemon zest
  • 2 large eggs, beaten with 1 tablespoon water
  • 7 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 3 tablespoons lemon juice
  • 3 tablespoons jarred capers
  • 1 large lemon, thinly sliced, for garnish
  • Freshly chopped parsley, for garnish

Instructions

  1. Step: Use a sharp knife to slice the chicken breast halves horizontally, butterflying them open. If the breast pieces are large, cut them into two pieces. If thick, pound the breasts with a meat mallet to an even 1/4-inch thickness.
  2. Step: Season chicken with salt and pepper. Place flour in one shallow dish, beaten eggs in a second, and a mixture of panko and lemon zest on a large plate.
  3. Step: Dredge each chicken breast in flour, shaking off excess. Dip into egg wash, then coat thoroughly with the panko mixture. Repeat for all pieces.
  4. Step: Heat 3 tablespoons butter and olive oil in a large cast iron skillet over medium-high heat. Brown chicken for 3 to 5 minutes per side. Remove chicken and set aside.
  5. Step: Add garlic to the skillet and cook for 1 minute. Stir in chicken broth; simmer for 5 minutes until reduced by half. Reduce heat to low, stir in remaining 4 tablespoons butter, lemon juice, and capers until melted. Season with salt and pepper.
  6. Step: Return chicken to the pan and simmer for 3 to 5 minutes. Top with lemon slices and parsley; serve warm.

Notes

Serve with pasta, rice, or crusty bread. Store leftovers in an airtight container in the refrigerator for up to 4 days.
