Description

This Loaded Chicken and Potato Casserole combines juicy chicken, tender potatoes, and melty cheese for a comforting family meal. Perfect for any occasion!


Ingredients

  • 1 pound chicken breasts, boneless and skinless, cubed
  • 1 pound potatoes, cubed
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon crushed red chili flakes
  • ¼ teaspoon cumin
  • salt, to taste
  • pepper, to taste
  • 1 ½ cups shredded Colby Jack cheese, divided
  • 8 slices turkey bacon, cooked and crumbled
  • ½ cup green onion, chopped

Instructions

  1. Step 1: Preheat the oven to 400°F and spray a 9×13-inch baking dish with non-stick cooking spray.
  2. Step 2: Cut chicken breasts into bite-sized cubes and add to a large bowl; wash and cube potatoes and add to the bowl with the chicken.
  3. Step 3: In a small bowl, combine olive oil, melted butter, smoked paprika, garlic powder, crushed red chili flakes, cumin, salt, and pepper.
  4. Step 4: Pour the mixture over the cubed chicken and potatoes and stir until all pieces are covered.
  5. Step 5: Transfer to the prepared baking dish, spread evenly, and bake for 45-55 minutes, stirring every 10-15 minutes.
  6. Step 6: Remove from the oven and sprinkle half of the cheese on top.
  7. Step 7: Top with turkey bacon crumbs and green onions.
  8. Step 8: Add the remaining shredded Colby Jack cheese on top and bake for an additional 5-10 minutes until the cheese melts.
