- 1 pound chicken breasts, boneless and skinless, cubed
- 1 pound potatoes, cubed
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter, melted
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon crushed red chili flakes
- ¼ teaspoon cumin
- salt, to taste
- pepper, to taste
- 1 ½ cups shredded Colby Jack cheese, divided
- 8 slices turkey bacon, cooked and crumbled
- ½ cup green onion, chopped
Instructions
- Step 1: Preheat the oven to 400°F and spray a 9×13-inch baking dish with non-stick cooking spray.
- Step 2: Cut chicken breasts into bite-sized cubes and add to a large bowl; wash and cube potatoes and add to the bowl with the chicken.
- Step 3: In a small bowl, combine olive oil, melted butter, smoked paprika, garlic powder, crushed red chili flakes, cumin, salt, and pepper.
- Step 4: Pour the mixture over the cubed chicken and potatoes and stir until all pieces are covered.
- Step 5: Transfer to the prepared baking dish, spread evenly, and bake for 45-55 minutes, stirring every 10-15 minutes.
- Step 6: Remove from the oven and sprinkle half of the cheese on top.
- Step 7: Top with turkey bacon crumbs and green onions.
- Step 8: Add the remaining shredded Colby Jack cheese on top and bake for an additional 5-10 minutes until the cheese melts.
