Description

An easy casserole made with ground beef and frozen hash brown potatoes, this is a hearty, cheesy dish that’s both filling and tasty.


Ingredients

  • 1 pound ground beef
  • 32 ounces frozen diced hash brown potatoes
  • 1 can cream of onion soup
  • 1 can cream of celery soup
  • 12-ounce can evaporated milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 34 cups shredded cheddar cheese

Instructions

  1. Step: Preheat oven to 350F. Grease a 13×9-inch baking dish and set aside.
  2. Step: In a skillet over medium high heat, cook the ground beef until it’s evenly browned, breaking it apart as it cooks. Drain excess grease.
  3. Step: While the ground beef is cooking, combine both cans of “cream of” soup, evaporated milk, garlic powder, paprika, and black pepper in a small mixing bowl. Whisk well to combine until smooth.
  4. Step: Add half of the frozen diced potatoes to the prepared baking dish, spreading them evenly across the bottom of the dish. Sprinkle half of the ground beef over the potatoes, then spoon half of the soup mixture over the ground beef.
  5. Step: Add half of the cheese over the soup mixture.
  6. Step: Repeat the layers, adding the remainder of the potatoes, followed by the remainder of the ground beef, the remainder of the soup mixture, and then the remainder of the cheese.
  7. Step: Cover the pan with foil and bake in preheated oven for about 1 hour. Remove the foil and bake for another 10 minutes.
  8. Step: Remove from oven and let sit for about 10-15 minutes to cool slightly, then serve warm.

Notes

You do not need to thaw the frozen hash browns. Diced hash browns are used for better structure. Cream of onion and celery soups can be substituted with cream of mushroom or cream of chicken. Use between 3-4 cups of cheese as preferred. To make it meatier, double the amount of ground beef. Leftovers can be refrigerated for 3-5 days.
