Ingredients

Scale
  • 500g (1.1lb) ground beef, 80/20 blend

  • 300ml (1 ¼ cup) low-sodium vegetable broth
  • 150g (5oz) onion, diced
  • 10g (0.35oz) garlic, minced
  • 30g (2 tbsp) tomato paste

  • 5g (1 tsp) salt
  • 2g (½ tsp) black pepper
  • 150g (1½ cup) sharp cheddar cheese, shredded
  • 30g (2 tbsp) unsalted butter, melted

  2. Sauté Aromatics: Sauté diced onion in olive oil until translucent (3-4 minutes).
  3. Brown Beef & Garlic: Add garlic, then brown ground beef, seasoning with salt and pepper.
  4. Combine & Simmer: Stir in rice, tomato paste, and soy sauce; simmer in vegetable broth.
  5. Transfer & Top: Transfer to baking dish and top with cheddar-garlic crumble.

Notes

Use freshly shredded cheddar for a crispier crust. Assemble the casserole ahead of time and refrigerate for up to 24 hours, adding baking time when ready to cook.
