Ingredients
- 40 cups water
- 1 cup Cajun seasoning blend
- 0.25 cup smoked paprika
- 4 medium lemons, sliced (half for boil, rest for serving)

- 2 large yellow onions, quartered
- 6 bay leaves
- 2 tablespoons sea salt
- 3.3 lbs baby red potatoes, scrubbed clean
- 1 lb spicy beef sausage, cut into 2-inch pieces (halal-certified, or use spicy chicken sausage)
- 6 ears of corn, halved
- 4.5 lbs Dungeness or Snow crab clusters, thawed if frozen
- 2 lbs large shrimp, peeled and deveined with tails on
- 0.5 cup vegetable oil
- 1 tablespoon red chili flakes
- Fresh herbs (dill, parsley, chives), finely chopped
Instructions
- Build Flavor Base: In an extra-large stockpot, combine water, Cajun seasoning blend, smoked paprika, 1.5 sliced lemons, smashed garlic, quartered onions, bay leaves, and sea salt. Bring to a rolling boil, then reduce heat to a vigorous simmer for 15 minutes to meld flavors.
