Description

This easy Cajun crab boil recipe transforms an ordinary evening into a lively celebration, bringing authentic Louisiana flavors to your kitchen. It’s a cherished family favorite, perfect for busy weeknights or special gatherings, known for its simplicity and delicious results.

Ingredients

Scale
  • 40 cups water
  • 1 cup Cajun seasoning blend
  • 0.25 cup smoked paprika
  • 4 medium lemons, sliced (half for boil, rest for serving)
  • 20 garlic cloves (12 smashed, 8 thinly sliced)
  • 2 large yellow onions, quartered
  • 6 bay leaves
  • 2 tablespoons sea salt
  • 3.3 lbs baby red potatoes, scrubbed clean
  • 1 lb spicy beef sausage, cut into 2-inch pieces (halal-certified, or use spicy chicken sausage)
  • 6 ears of corn, halved
  • 4.5 lbs Dungeness or Snow crab clusters, thawed if frozen
  • 2 lbs large shrimp, peeled and deveined with tails on
  • 0.5 cup vegetable oil
  • 1 tablespoon red chili flakes
  • Fresh herbs (dill, parsley, chives), finely chopped

Instructions

  1. Build Flavor Base: In an extra-large stockpot, combine water, Cajun seasoning blend, smoked paprika, 1.5 sliced lemons, smashed garlic, quartered onions, bay leaves, and sea salt. Bring to a rolling boil, then reduce heat to a vigorous simmer for 15 minutes to meld flavors.
  2. Add Potatoes: Add baby red potatoes to the simmering liquid. Cook for 15-20 minutes, or until tender-crisp.
  3. Introduce Sausage & Corn: Stir in the beef sausage pieces and corn halves. Continue to cook for 8-10 minutes, until sausage is heated through and corn is tender.
  4. Cook Crab: Gently add crab clusters to the pot. Cook for 5-7 minutes, or until heated through and shells turn red-orange.
  5. Finish With Shrimp: Add shrimp to the pot last. Cook for only 2-3 minutes, or until pink and opaque.
  6. Prepare Crispy Garlic-Chile Oil: While seafood cooks, heat vegetable oil in a small saucepan over medium-low heat. Add thinly sliced garlic and red chili flakes. Cook gently for 8-10 minutes, stirring occasionally, until garlic turns golden brown and crispy.
  7. Serve It Up: Remove all cooked ingredients from the stockpot and transfer to a large serving platter. Arrange crab, corn, potatoes, and sausage. Scatter remaining fresh lemon slices. Drizzle generously with prepared Crispy Garlic-Chile Oil. Sprinkle liberally with finely chopped fresh dill, parsley, and chives.

Notes

If the water level gets too low during cooking, add a cup of hot water to keep everything submerged and cooking evenly. Do not overcook shrimp, as they cook very quickly. For the crispy garlic-chile oil, ensure the garlic turns golden brown and not burned; it will continue to crisp as it cools. Always use fresh herbs for a significant difference in the final dish.
