Ingredients

Scale
  • 250g (9oz) Farfalle Pasta: Dried pasta preferred for texture.
  • 300g (10.5oz) Ground Beef: Halal or regular.
  • 2 tbsp (30ml) Olive Oil: Extra virgin.
  • 2 tbsp (28g) Butter (for sauce): Unsalted.
  • 2 tbsp (30g) Cajun Seasoning (divided)
  • 2 cloves Garlic, minced
  • 100g (3.5oz) Cream Cheese (for sauce): Softened, full-fat.
  • 200ml (¾ cup + 2 tbsp) Heavy Cream
  • 50g (½ cup) Parmesan Cheese: Freshly grated.
  • Salt and Pepper to taste
  • 1 Poblano Pepper, roasted, peeled, diced
  • 50g (1¾oz) Cream Cheese (for poblano swirl): Softened.
  • 30g (¼ cup) Breadcrumbs: Plain or Panko.
  • 1 tbsp (14g) Butter (for breadcrumb topping)
  • 1 tsp (5g) Cajun Seasoning (for breadcrumb topping)
  • Fresh Parsley, chopped

Instructions

  1. Cook Pasta: Boil pasta until al dente, reserving ½ cup pasta water.
  2. Brown Beef: Sauté ground beef with 1 tbsp Cajun seasoning until browned.
  3. Bloom Garlic: Sauté minced garlic in 2 tbsp butter until fragrant.
  4. Build Alfredo Base: Whisk in cream cheese and heavy cream until smooth and thickened.
  5. Season & Adjust: Add Parmesan and remaining Cajun seasoning; adjust with pasta water if needed.
  6. Prepare Poblano Swirl: Blend roasted poblano with cream cheese and cream until smooth.
  7. Combine & Coat: Toss pasta with sauce and browned beef.
  8. Create Swirl: Dollop and swirl poblano cream into the sauce.
  9. Make Breadcrumb Topping: Toast breadcrumbs with butter and Cajun seasoning.
  10. Plate & Garnish: Plate pasta, drizzle with sauce, sprinkle with breadcrumbs and parsley.

Notes

Roasting the poblano pepper is key for smoky flavor. Adding cream cheese to the Alfredo sauce creates a richer, tangier flavor.
