Buffalo Chicken Thighs are my new favorite quick and easy recipe for a busy weeknight dinner or healthy meal prep! Cooked in the air fryer or baked in the oven, this simple recipe is both marinated and smothered in a spicy, savory buffalo sauce, making it extra flavorful and delicious.

- 2 lb boneless, skinless chicken thighs, about 6 pieces
- 1/4 cup buffalo sauce
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 2 tbsp salted butter, melted
- 2 tbsp buffalo sauce
Instructions
- Step: Add the boneless skinless chicken thighs, buffalo sauce, olive oil, garlic powder, onion powder, dried oregano, paprika, and black pepper to a large bowl. Toss to combine until the thighs are thoroughly coated. Cover and refrigerate to marinate for at least 30 minutes.
- Step: For air frying: Preheat air fryer to 400 degrees F. Spray the basket with non-stick spray. Place chicken thighs in the basket. Air fry for 10 minutes, flip, and air fry for another 6 minutes.
- Step: For baking: Preheat your oven to 425 degrees. Spray a baking sheet with cooking spray. Place the chicken pieces on the sheet. Bake for 20-25 minutes.
- Step: While the chicken is cooking, prepare the topping by combining the melted butter and remaining buffalo sauce in a small bowl.
- Step: Spread the buffalo sauce mixture over the cooked chicken thighs or carefully toss them in it. Serve and enjoy.
Notes
Marinating is key for flavor. For crispier results, pat the chicken dry before adding the marinade. You can serve this with a drizzle of ranch or blue cheese dressing and green onions.
