Description

This recipe delivers golden-crisp chicken wings with tender, juicy meat, coated in a vibrant, zesty cilantro-lime glaze. It’s a healthier, homemade alternative perfect for a satisfying weeknight family meal.

Ingredients

Scale
  • 1.5 kg chicken wings, patted very dry, separated
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 1 large bunch fresh cilantro (about 60 g / 2 oz), stems trimmed
  • 2 medium jalapeno peppers, seeded and roughly chopped
  • 3 cloves garlic, peeled
  • 1 inch fresh ginger, peeled and roughly chopped
  • 60 ml fresh lime juice (0.25 cup)
  • 1 tablespoon lime zest
  • 60 ml alcohol-free tamari (0.25 cup)
  • 30 ml alcohol-free rice vinegar (2 tablespoons)
  • 2 tablespoons brown sugar
  • 120 ml vegetable broth (0.5 cup)
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons fresh cilantro, finely chopped (for garnish)
  • 1 lime, cut into wedges (for garnish)

Instructions

  1. Preheat Oven: Set your oven to 200°C (400°F). Line a large baking sheet with parchment paper, or place a wire rack on top, for easy cleanup and even cooking.
  2. Season Wings: In a large bowl, toss the patted-dry chicken wings with olive oil, then sprinkle evenly with sea salt, black pepper, garlic powder, and onion powder until well coated.
  3. Arrange for Crisping: Arrange the seasoned wings in a single layer on the prepared baking sheet or wire rack, ensuring no pieces are touching. This spacing promotes maximum crispness.
  4. Bake Wings: Bake for 45-55 minutes, flipping them halfway through, until the wings are visibly golden brown, crispy, and cooked through (internal temperature reaches 74°C / 165°F). (If not browning enough, you can briefly broil them for 2-3 minutes at the end, watching carefully.)
  5. Prepare Glaze: While the wings are baking, combine the cilantro, seeded jalapeno peppers, garlic, ginger, lime juice, lime zest, alcohol-free tamari, alcohol-free rice vinegar, brown sugar, and vegetable broth in a blender. Blend until completely smooth and vibrant green.
  6. Thicken Glaze: Pour the blended glaze into a small saucepan over medium heat. Bring it to a gentle simmer, then whisk in the cornstarch mixed with 2 tablespoons cold water (this is your slurry). Continue to cook, stirring constantly, for 2-3 minutes until the glaze thickens to a syrupy consistency that coats the back of a spoon. Remove from heat.
  7. Glaze Wings: Once the wings are baked, transfer them immediately to a large clean bowl. Pour the warm cilantro-lime glaze over the hot wings and toss vigorously until every single wing is thoroughly coated in the glossy, vibrant green sauce.
  8. Serve with Flair: Arrange the glazed chicken wings artfully on a serving platter. Drizzle any remaining glaze from the bowl over the wings for extra sheen and flavor. Scatter the finely chopped fresh cilantro over the top for a pop of contrasting green, and place lime wedges alongside for an optional squeeze of fresh citrus.

Notes

For quick preparation, use an air fryer at 190°C (375°F) for 20-25 minutes, shaking frequently. For dietary adjustments, ensure tamari is gluten-free for GF; for low-carb, omit brown sugar or use a sugar-free alternative. Consider other flavor profiles like Honey Garlic or Lemon Pepper by tossing hot wings with a simple sauce or seasoning.
