Ingredients
Scale
- 8 oz. macaroni pasta
- 1 1/2 cup mayonnaise
- 1 cup whole milk
- 1 cup grated carrots
- 1/2 cup chopped green onions
- 2 tbsp vinegar
- 1 tbsp sugar
- 1/2 tsp salt
- 1 tsp black pepper powder
Instructions
- Cook Pasta: Boil elbow macaroni for 1-2 minutes longer than the package directions until soft, then drain and cool.
- Vinegar Toss: Place pasta in a large bowl and toss with vinegar, letting it cool for 10 minutes.
- Make Dressing: In a separate bowl, whisk together mayonnaise, milk, salt, pepper, and sugar until smooth.
- Combine: Add grated carrots and green onions to the pasta, pour over the dressing, and toss to coat thoroughly.
- Chill: Cover and refrigerate for at least 30 minutes before serving.
Notes
Always add vinegar to the warm pasta to ensure flavor absorption and prevent milk curdling. Use full-fat mayonnaise and milk for the best creamy texture.
