- 120g all-purpose flour, sifted
- 5g baking powder
- 2g fine sea salt
- 50g granulated sugar
- 120ml whole milk
- 1 large egg, room temperature
- 5ml alcohol-free vanilla extract
- 2g ground cinnamon
- 1g ground nutmeg
- 2L vegetable oil for deep-frying
- 100g powdered sugar
- 30ml whole milk
- 2.5ml alcohol-free vanilla extract
- Pinch of ground cinnamon
- Fresh mint leaf for garnish
- 2 tbsp caramel sauce
Instructions
- Prepare Apples: Dice apples into 1cm cubes, removing the core.
- Combine Dry Ingredients: Whisk flour, baking powder, salt, sugar, cinnamon, and nutmeg.
- Mix Wet Ingredients: Whisk milk, egg, and vanilla extract.
- Combine Wet & Dry: Gently combine wet and dry ingredients until a thick batter forms.
- Heat Oil: Heat oil to 180°C (350°F).
- Fry Fritters: Dip apple cubes in batter and fry in batches for 2-3 minutes until golden brown.
- Drain & Coat: Drain fritters and toss in cinnamon-sugar mixture.
- Prepare Glaze: Whisk powdered sugar, milk, and vanilla extract.
- Glaze & Finish: Drizzle glaze over warm fritters and garnish.
Notes
For best results, maintain oil temperature and avoid overcrowding the pot. Using room temperature ingredients helps with emulsification.
