Description

This recipe delivers extra crunchy, cheesy chicken cutlets made quickly in the air fryer, perfect for easy weeknight dinners with a golden crust and juicy inside.

Ingredients

Scale
  • 2 large chicken breasts (about 1 ½ pounds / 700g), sliced in half horizontally
  • 1 ½ cups Panko breadcrumbs (150g)
  • ¾ cup freshly grated Parmesan cheese (75g)
  • 2 large eggs, beaten with a splash of water
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Step 1: Slice chicken breasts in half horizontally to about ½ inch thickness. Pound gently with a meat mallet or rolling pin if needed for even thickness.
  2. Step 2: Set up breading station: beat eggs with a splash of water in one bowl; combine Panko, Parmesan, garlic powder, Italian seasoning, salt, and pepper in another bowl.
  3. Step 3: Pat chicken cutlets dry with paper towels. Dip each cutlet into egg wash, letting excess drip off, then press firmly into breadcrumb mixture to coat evenly.
  4. Step 4: Preheat air fryer to 400°F (200°C) for about 3 minutes. Lightly spray both sides of breaded cutlets with olive oil spray.
  5. Step 5: Arrange cutlets in a single layer in the air fryer basket without overcrowding. Cook for 6 minutes, flip gently with tongs, then cook another 6 minutes until golden and internal temperature reaches 165°F (74°C).
  6. Step 6: Let cutlets rest for 2 minutes on a cooling rack or plate before serving.

Notes

Pat chicken dry before breading to avoid soggy coating. Spray olive oil lightly and evenly on both sides for best crispiness. Flip cutlets only once halfway through cooking. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C). For gluten-free, use gluten-free Panko breadcrumbs.
