List of ingredients

  • 3.5 pounds chicken pieces (legs, thighs, breasts, wings) – bone-in and skin-on for maximum flavor.
  • 1/4 cup seasoned all purpose flour – mix 1/4 cup flour with 1 tsp salt, 1 tsp thyme, 1 tsp paprika, 1/2 tsp pepper, 1/2 tsp garlic powder, and 1/2 tsp onion powder.
  • 2 tablespoons vegetable oil – used for searing the chicken.
  • 1 large onion – cut into 1/2 inch pieces.
  • 4 large carrots – peeled and cut into 1/2 inch slices.
  • 4 celery ribs – cut into 1/2 inch slices.
  • 1 red bell pepper – cut into 1/2 inch slices.
  • 2 cloves garlic – minced (approximately 2 teaspoons).
  • 3 cups fresh baby spinach – roughly chopped, added at the end (optional).
  • 2 cups chicken broth – for the braising liquid and sauce base.
  • 1/2 teaspoon dried thyme – adds an earthy aromatic note.
  • 2 tablespoon cornstarch mixed into 1/4 cup cold water – used as a thickening slurry.
  • Salt and black pepper – to taste.
  • Chopped green onions or parsley – for final garnish.

step-by-step instructions

  1. Prepare the oven and chicken: Preheat your oven to 350F (176.7C). Trim any excess fat from the chicken pieces, place the seasoned flour in a plastic bag, and shake each piece of chicken in the bag until evenly coated, shaking off any excess flour before discarding the remaining mixture.
  2. Sear the meat: Heat vegetable oil in a large oven-safe skillet or Dutch oven over medium to medium-high heat. Fry the chicken pieces for about 3 minutes per side until they are golden brown, then transfer them to a plate lined with paper towels to drain.
  3. Sauté the vegetables: In the same skillet, add the onion, carrots, celery, red bell pepper, and minced garlic. Sauté these vegetables for approximately 5 minutes until they begin to soften.
  4. Combine and bake: Return the seared chicken to the skillet, settling the vegetables around and on top of the meat. Pour in the chicken broth and sprinkle the dried thyme over the top. Cover the skillet with a lid and bake in the oven for 35 to 45 minutes, or until the chicken reaches an internal temperature of 160F-165F (71-74C).
  5. Thicken the sauce: Remove the chicken from the skillet and set it aside on a plate. Skim off any excess grease from the surface of the liquid and discard it. Place the skillet back on the stove over high heat and bring the vegetable and broth mixture to a boil.
  6. Finalize the gravy: Stir in the cornstarch-water slurry and cook for about 1 minute until the sauce thickens. Reduce the heat to low, stir in the chopped spinach until wilted (about 1 minute), and adjust salt and pepper as needed.
  7. Assemble and serve: Return the chicken to the skillet and spoon the thickened sauce over the meat to coat it thoroughly. Transfer the dish to a platter or serve directly from the skillet, garnishing with parsley or green onions.

Meat Selection and Alternatives

Choosing the Best Chicken Cuts

Using a variety of bone-in, skin-on pieces provides the best depth of flavor and keeps the meat moist. Dark meat, such as thighs and drumsticks, is particularly well-suited for this recipe because it resists drying out during the oven-braising phase. If you prefer white meat, bone-in breasts are recommended over boneless versions to maintain juiciness.

Using Skinless Chicken

You can use skinless chicken if you prefer a leaner meal or wish to reduce the total fat content. When using skinless pieces, be mindful that the searing process happens faster and the meat may cook more quickly in the oven. Reduce the baking time slightly to ensure the white meat does not become overcooked.

Alternative Protein Options

While chicken is the standard, this method works well with other hearty meats like bone-in turkey pieces. The cooking time should be adjusted based on the size of the cuts to ensure they reach the safe internal temperature. Avoid using very lean proteins that might toughen during the 45-minute baking window.

Vegetable Modifications

Adding Root Vegetables

To add more heartiness to the dish, consider incorporating cubed sweet potatoes or parsnips. These vegetables hold up well during the long baking process and complement the savory gravy. Ensure they are cut into similar 1/2 inch sizes so they cook at the same rate as the carrots.

Avoiding Watery Vegetables

It is best to avoid adding high-water content vegetables like zucchini or summer squash during the baking stage. These vegetables release a significant amount of liquid and can become mushy, which may thin out your sauce too much. If you wish to include them, sauté them separately and stir them in at the very end with the spinach.

Using Frozen Spinach

If fresh baby spinach is unavailable, frozen chopped spinach is an excellent substitute. Microwave the frozen spinach on high for 3 minutes, then squeeze out as much excess water as possible before stirring it into the sauce. This prevents the gravy from becoming watered down during the final step.

Incorporating Mushrooms

Adding sliced cremini or button mushrooms during the sauté phase adds a rich, umami flavor to the dish. Sauté them with the onions and carrots until they release their moisture and brown slightly. This adds another layer of complexity to the overall flavor profile of the sauce.

Flavor and Spice Enhancements

Customizing the Herb Profile

While thyme is the primary herb, rosemary is a fantastic alternative for a more piney, aromatic taste. You can also use a blend of sage, marjoram, or a general poultry seasoning mix. These herbs pair naturally with chicken and root vegetables, enhancing the comfort-food quality of the meal.

Adding a Hint of Heat

For those who prefer a bit of spice, add a pinch of cayenne pepper or red chili flakes to the seasoned flour. This provides a subtle warmth that cuts through the richness of the gravy without overpowering the other ingredients. You can also add a teaspoon of smoked paprika for a deeper, woodsy flavor.

Adjusting the Garlic Intensity

Depending on your preference, you can increase the garlic to four or five cloves for a bolder taste. To prevent the garlic from burning during the initial sauté, add it during the last minute of browning the vegetables. This ensures the garlic releases its oils without becoming bitter.

Serving Suggestions and Pairings

Ideal Starch Accompaniments

The rich gravy in this dish is best paired with starches that can absorb the sauce. Fluffy mashed potatoes are the classic choice, but steamed white rice, quinoa, or wide egg noodles also work well. For a more traditional feel, serve the meal with a side of crusty sourdough bread to soak up every drop of sauce.

Low-Carb Side Options

If you are looking for a lighter alternative to potatoes or rice, seasoned cauliflower rice is an excellent choice. Another option is to serve the chicken and vegetables over a bed of steamed cabbage or sautéed kale. These options maintain the comfort of the meal while reducing the overall carbohydrate count.

Complementary Fresh Salads

To balance the richness of the smothered chicken, serve a bright, acidic side salad. A simple mixture of sliced tomatoes, red onion, and a light vinaigrette provides a refreshing contrast. A citrus-based arugula salad with lemon juice and olive oil also cuts through the savory depth of the gravy.

Storage and Advance Preparation

Refrigerating Leftovers

Once the dish has cooled, store it in an airtight container in the refrigerator for up to three to four days. The flavors often meld and intensify overnight, making the leftovers taste even better. Ensure the container is completely sealed to prevent the chicken from absorbing other fridge odors.

Reheating Methods

For the best results, reheat the dish in the oven at 350F (176.7C) for about 20 minutes until heated through. If using a microwave, heat in short intervals and stir gently to avoid overcooking the vegetables. If the sauce has thickened too much during storage, stir in a tablespoon of chicken broth or water before reheating.

Make-Ahead Strategy

You can prepare the entire recipe a day in advance, cool it, and refrigerate it. When you are ready to serve, simply warm the entire dish in the oven. Note that the spinach will lose its vibrant green color and become a duller olive green upon reheating, though the taste remains the same.

Time-Saving Preparation Methods

Using Pre-Seasoned Flour

If you are in a rush, you can replace the homemade seasoned flour with a store-bought chicken seasoning mix. Look for blends that contain salt, pepper, and garlic, but avoid those with high sugar content or heavy chili powder. Simply mix the pre-made seasoning into your all-purpose flour in the same proportions.

Pre-Cut Vegetable Mixes

To save time on chopping, use a pre-cut mirepoix mix consisting of diced onions, carrots, and celery. Ensure the pieces are roughly 1/2 inch in size to maintain the intended texture. If the pre-cut pieces are too small, reduce the sauté time to prevent them from burning.

Simplified Garlic Options

Instead of mincing fresh cloves, you can use jarred minced garlic or frozen garlic cubes. While fresh garlic has a sharper bite, jarred versions are convenient for weeknight cooking. Use a 1:1 ratio of jarred garlic to the minced amount called for in the recipe.

Common Cooking Questions

Can I use boneless chicken instead of bone-in?

Yes, you can use boneless chicken, but you must reduce the baking time significantly to prevent the meat from drying out. Check the internal temperature after 20-25 minutes of baking. Boneless meat does not provide the same depth of flavor to the sauce as bone-in pieces, so you may want to add an extra splash of broth.

How do I fix a sauce that is too thin?

If your sauce has not thickened enough after adding the slurry, simply simmer it on the stove for a few more minutes. You can also mix an additional teaspoon of cornstarch with a teaspoon of cold water and stir it into the boiling liquid. Continue simmering until the desired consistency is achieved.

What if I don’t have an oven-safe skillet?

If your skillet cannot go into the oven, simply transfer the seared chicken and sautéed vegetables into a covered roasting pan or a baking dish. Pour the broth over the ingredients as directed and bake as usual. You will then need to transfer the liquid back to the stove to finish the sauce.

Can I use a slow cooker for this recipe?

While this is designed as a skillet meal, you can adapt it for a slow cooker by searing the chicken and vegetables first. Place everything in the crockpot and cook on low for 6-7 hours or high for 3-4 hours. You will still need to thicken the sauce at the end using the cornstarch slurry on the stovetop.

Description

Smothered chicken is one of my favorite comfort foods. Tender moist chicken smothered in onions, carrots, celery, peppers and spinach and a yummy sauce – all in one skillet. Food for the soul, this one pot meal of chicken and vegetables goes way back, over 30 years at least.

Ingredients

Scale
  • 3.5 pounds chicken pieces (bone in, skin on)
  • 1/4 cup seasoned all purpose flour
  • 2 tablespoons vegetable oil
  • 1 large onion, cut into 1/2 inch pieces
  • 4 large carrots, peeled, cut in 1/2 inch slices
  • 4 celery ribs, cut into 1/2 inch slices
  • 1 red bell pepper, cut into 1/2 inch slices
  • 2 cloves garlic, minced
  • 3 cups fresh baby spinach, roughly chopped
  • 2 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 2 tablespoon cornstarch, mixed into 1/4 cup cold water
  • salt and black pepper to taste
  • chopped green onions or chopped parsley

Instructions

  1. Preheat: Preheat oven to 350F/176.7C
  2. Prepare Chicken: Trim extra fat from chicken. Place seasoned flour into a bag and season chicken pieces, one at a time, by shaking in bag (shake off excess flour and discard any remaining flour mixture after all chicken is coated).
  3. Sauté Chicken: In a large skillet or Dutch oven, heat oil on medium heat to medium-high heat. Add chicken to the bottom of the pan and fry on one side until golden brown, about 3 minutes. Turn chicken and repeat on second side. Drain on a paper towel over plate and set chicken aside.
  4. Sauté Vegetables: Sauté vegetables and garlic in the skillet for 5 minutes. Place chicken back in skillet and settle vegetables under and on top of chicken.
  5. Bake: Pour broth into bottom of skillet and sprinkle chicken and vegetables with thyme. Cover chicken, place in the oven and cook chicken for about 35-45 minutes.
  6. Finish Sauce and Serve: Remove chicken to a plate and set aside while you finish the sauce. Skim grease floating on the top and discard. Place skillet on stove and bring vegetable and broth mixture to a boil. Pour in the cornstarch-water slurry and stir until thickened, 1 minute. Reduce heat to low, stir in spinach and cook just until wilted, about 1 minute. Place chicken back into the skillet and spoon over sauce to coat it.

Notes

To make seasoned flour: combine 1/4 cup flour with 1 teaspoon salt, 1 teaspoon thyme, 1 teaspoon paprika, ½ teaspoon pepper, ½ teaspoon garlic powder and 1/2 teaspoon onion powder.
